Rwandan coffees are known for their clean and crisp, washed Red bourbon varieties. They are elegant, rather than boozy and intense.

Ernest Mwumvaneza is current head of the family business. His grandparents were farmers and his dad inherited the land to start growing coffee in the 1950s. Currently they maintain 22 washing- and processing stations in all four coffee regions in the country. Always focussed on providing great quality coffee with the diverse flavour profile Rwanda has to offer, to the rest of the world.

Murambi is one of their washing stations that are supplied with coffee cherries by 137 registered farmers from the area. These small farmers deliver their coffee by foot or bicycle between March and June. At Murambi the cherries are pulped and the coffee beans that come out are fermented in water for 12-15 hours, depending on the temperature. Then the coffee gets washed and graded in different qualities whereafter it's been dried in the sun to come to the right moisture levels.

This is one of the very first, fresh harvest lots from Rwanda this season!

Pour over
Ground coffee: 18 gram
Water: 300 gram
Time: 2:30 minutes

Steps
1. pre-wet your paper filter, add the ground coffee
2. start the timer and pour 60 grams of water on the coffee, stir the slurry so all grounds are evenly wet
3. after 30 seconds pour another 120 grams of water
4. at 1:15 minutes add the additional 120 grams of water
5. stir gently to create an even extraction and flat coffee bed as a result
