New harvest from Gibran Cervantes! This time a Pink bourbon variety, incredible complex and biodynamically farmed.

Ensambles, founded by Gibran, is a network of Mexican coffee specialists working together to provide great quality coffee to the world. We definitely support that mission!

This coffee grows on their own farm, El Equimite, which is holistically organised and is cultivating coffee according to biodynamic principles. Besides, the farm is a natural reserve with the purpose to restore and preserve an ecosystem full of tree species, medical plants and wild life like birds, butterflies and lizards.
Gibran Cervantes is a very engaged personality and next to his focus on high quality and sustainable coffee he takes care of his community. Ensambles is one pillar in his society while another pillar is a kids school following the Montessori philosophy.

Pour over
Ground coffee: 20 gram
Water: 300 gram
Time: 2:30 minutes

Steps
1. pre-wet your paper filter, add the ground coffee
2. start the timer and pour 60 grams of water on the coffee, stir the slurry so all grounds are evenly wet
3. after 30 seconds pour another 120 grams of water
4. at 1:00 minutes add the additional 120 grams of water
5. stir gently to create an even extraction and flat coffee bed as a result

We currently roast bi-weekly on Fridays. New orders will be sent out after the next roast day or earlier depending on stock.
