High up in the Apaneca-Ilamatepec mountains of El Salvador, Rodolfo Ruffatti is continuing a family coffee-growing tradition that goes back generations. Finca El Salvador has been in the Ruffatti family since 1934, and Rodolfo is bringing his own touch to the farm by experimenting with exciting coffee varieties and processing methods.
One of those varieties is Pacamara, famous for its unusually large beans. Fun fact: Pacamara is a cross between the two main arabica branches, the dwarf mutation of Bourbon (Pacas) and the giant mutation of Typica (Maragogype), that shows expressive flavour which we didn't see in either of the parent varieties.
The result? A coffee that feels like a walk through a fragrant garden, floral, fresh and a little unexpected! This beautiful Pacamara brings together delicate jasmine, the brightness of bergamot and a refreshing basil note. An elegant and aromatic filter coffee with a ton of sweetness.
Sometimes we run into coffees that have great people behind them, are produced sustainable with best intentions for nature and the future of coffee growing but are not officially certified. These producers we still want to support to share their coffee with you. You recognise these coffees by the green, Balloon B-symbol on the coffee bag label.
We currently roast bi-weekly on Fridays. New orders will be sent out after the next roast day.
