Bolivian coffee is praised for their quality due to having the highest elevation farms in the world. This is where coffee cherries slowly ripe and develop their complexity. No wonder Cholopata’s coffees are seen in international competitions.

The lot that we picked, produced by Carolina and Tomas, takes you on a flavour rollercoaster. It’s bright and full of red fruit!

Besides producing quality coffee the couple focusses on conserving the flora and fauna of their Oro Verde community in the Caranavi region on their biodynamic farm. They strongly believe, and we do with them, that biodynamic farming not only benefits the quality but also promotes harmony and balance on the farm and the natural environment that surrounds them. With this they are working actively on the future of coffee, beyond its quality, it is about environmental conservation.

Pour over
Ground coffee: 20 gram
Water: 300 gram
Time: 2:30 minutes

Steps
1. pre-wet your paper filter, add the ground coffee
2. start the timer and pour 60 grams of water on the coffee, stir the slurry so all grounds are evenly wet
3. after 30 seconds pour another 120 grams of water
4. at 1:00 minutes add the additional 120 grams of water
5. stir gently to create an even extraction and flat coffee bed as a result
