Finally we get to showcase and share Cesar’s work. An experimental processed coffee on his biodynamic family farm. Most of all Cesar is an incredible kind and humble person that we love to collaborate with.

Dagoberto Marin, his father, is a pioneer in growing biodynamic coffee. This started with a commitment to understanding nature and the human being and respect for the biodiversity of the Peruvian jungle.
In 2005 he took on the ambitious project to transform 50 hectares to biodynamic agriculture and permaculture to recover soil fertility, free of toxins, as an example for his children and surrounding.

This particular lot was processed on La Chacra D’Dago as an experiment. The complexity in this coffee turned out to be overwhelming and we are grateful we could get a limited amount to Zurich.

Pour over
Ground coffee: 20 gram
Water: 300 gram
Time: 2:30 minutes

Steps
1. pre-wet your paper filter, add the ground coffee
2. start the timer and pour 60 grams of water on the coffee, stir the slurry so all grounds are evenly wet
3. after 30 seconds pour another 120 grams of water
4. at 1:00 minutes add the additional 120 grams of water
5. stir gently to create an even extraction and flat coffee bed as a result

We currently roast bi-weekly on Fridays. New orders will be sent out after the next roast day or earlier depending on stock.
