Number 1 farm when we think about Ethiopia, the birthplace of arabica coffee. As we visited and worked with Suke Quto's coffees already for years during our careers. This specific coffee is washed processed, well balanced, clean and has a beautiful fruit and floral touch, exactly like we know from Tesfaye.
Tesfaye is one of the coffee producers who put Guji, as a coffee producing region, on the world map. Located in the far southern part of Ethiopia, the road towards him is long, astonishing and adventurous.

After the heavy bushfires in the region it was agronomist Tesfaye who suggested replanting trees, including coffee, for biodiversity which could give a solid income for the community.
Most recently he build a school for the local community so the kids have a great place to go to when mom and dad pick cherries and work on the farm.

Pour over
Ground coffee: 20 gram
Water: 300 gram
Time: 2:30 minutes

Steps
1. pre-wet your paper filter, add the ground coffee
2. start the timer and pour 60 grams of water on the coffee, stir the slurry so all grounds are evenly wet
3. after 30 seconds pour another 120 grams of water
4. at 1:00 minutes add the additional 120 grams of water
5. stir gently to create an even extraction and flat coffee bed as a result
