Victor Cordero, in our eyes, is an exemplary coffee producer from Colombia. He is based in Santa Marta, the most northern coffee region in the country.

Victor is Mr. Organic and dedicated over 20 years of his life to improve social and environmental dynamics in the Santa Marta region. He pioneered with organic farming and wants to help grow the community of sustainable producers to strengthen the relationships and peace in the region after the decades of civil war.

That’s why he co-founded Red Ecolsierra, a cooperative where right now 300 producing families found home, producing purely organic coffee. They focus on forest conservation and besides coffee produce cacao and honey.

Victors washed Castillo reminds of a classic Colombian coffee, great acidity and very well balanced. An everyday morning cup.

Pour over
Ground coffee: 18 gram
Water: 300 gram
Time: 2:30 minutes

Steps
1. pre-wet your paper filter, add the ground coffee
2. start the timer and pour 60 grams of water on the coffee, stir the slurry so all grounds are evenly wet
3. after 30 seconds pour another 120 grams of water
4. at 1:15 minutes add the additional 120 grams of water
5. stir gently to create an even extraction and flat coffee bed as a result

We currently roast bi-weekly on Fridays. New orders will be sent out after the next roast day or earlier depending on stock.
