The second year that we are running Oscars coffee from Hacienda Cafetera La Pradera, this time a Tabi variety on espresso!

La Pradera is a family-owned estate, ran by Oscar Daza, third generation coffee producer with a vision to produce extraordinary, organic specialty coffee. It was good fun meeting Oscar during the World of Coffee Exhibition in Athens this summer and talk about our future collaborations.

This year we picked a honey processed coffee from his Tabi variety. Tabi, translated to "good" in native Colombian language. Good is an understatement here!
The delicious, Tabi coffee cherries come in red and yellow and they feel totally at home at La Pradera. The tall plant, well resistant to diseases, has been growing exceptionally well on the local soil and environment.
For this lot the coffee cherries are anaerobic fermented (without oxygen) for 36 hours. Thereafter the cherries are pulped and fermented for another 60 hours. Finally the coffee is slowly dried which altogether creates this smooth cup.
