Hidardo Hernandez, dedicated coffee producer and founder of Cafesmo, the association which enables many producers from the area to keep continuing producing great coffees.

Cafesmo is a group of more than 250 members who have been working together for many years. In 2016 the group formed themselves into a cooperation. The individual farms are relatively small, most of them ranging from 2 to 12 hectares. But united they stand strong, and together they stand for the motto: "diversity and quality"!

Hidardo Hernandez is born as fourth generation coffee producer. Hidardo and his mother own together around 3.5 hectares of beautiful coffee plots near one another at an altitude of 1230 to 1300 meters. They work with several varieties like Parainema, Obata and Bourbon in order to offer a wide range of micro lots and something suitable for every palate. Apart from pine trees, that are naturally predominant in the region, they have planted additional trees to generate sufficient shadow on all parts of the farm. Banana trees, American walnut, hazel pine, guamo and malcinca.

Pour over
Ground coffee: 18 gram
Water: 300 gram
Time: 2:30 minutes

Steps
1. pre-wet your paper filter, add the ground coffee
2. start the timer and pour 50 grams of water on the coffee, stir the slurry so all grounds are evenly wet
3. after 30 seconds pour another 150 grams of water
4. at 1:15 minutes add the additional 100 grams of water
5. stir gently to create an even extraction and flat coffee bed as a result

We currently roast bi-weekly on Fridays. New orders will be sent out after the next roast day or earlier depending on stock.
